The location, formerly known as Vex Bar, has undergone a significant metamorphosis, though some familiar architectural elements remain. Dark wood tables and the original bar setup offer a nod to its past, but the spirit and sustenance within are entirely new. Yen Collman and her husband, Dustin, moved to Forest Grove in 2022. It was during this time that Yen identified a gap in the local culinary landscape—a distinct lack of Vietnamese cuisine in the city’s heart. When Vex Bar announced its closure this spring, Collman seized the opportunity to realize her vision.

Collman, who immigrated to the United States from Ho Chi Minh City in 2004, is driven by a profound passion for cooking and a desire to share her roots. “I want to see people eating my food; it’s like family. I want to share my food and where I come from,” Collman articulated, emphasizing the deeply personal connection she has to her offerings. Her grandfather, a Vietnam War veteran, paved the way for her family’s immigration, fostering a strong link to her heritage that now infuses every dish served at VEx.
